Here I had the pleasure of
meeting a family preparing these
tasty corn treats called
rosquillas, in preparation for
Easter. These are handmade,
mixing corn and cheese, rolled
into circle like ‘very small’ donut
shapes and cooked in open fire
ovens.
You can find these treats in
local grocery stores and
sometimes, if you are lucky, at
roadside stands.

When I walked into this place I
was greeted by a group of the
most friendly and helpful staff
until I tried to get a room.
Turns out the owner, Patrick, is
so great that everyone who stays
there ends up liking him and his
place and is helpful and friendly
to all other travellors coming to
spend the night.

Meeting Patrick, he was
enthusiastic, young and a
personal fitness trainer who was
just returning from a session.

This horrible beauty was moving
from one hibiscus bush to another
and I almost walked into him when
my eyes re-focused in time to see
the brown-stick like colour of
the rest of his body shape into
the snake.

I was told by Pina, who works
here at the hotel restaurant that
this snake is called a Bejuquilla
and is not a lethal snake. He is
really thin and long. I would say
about 3 feet long.

This is chocolate in its first
stage. Being picked as a fruit.
The white stuff in the middle is
edible and as you eat it, you
will discover you are eating
around seeds. These seeds are
cacao the stuff from which you
make: chocolate, cocoa butter,
and yes body scrubs..soon to come
to the healing centre.

Having recently returned to the
Harmony Hotel from Canada to
officially ‘re-open’ the Healing
Centre of Radiant Awakening. I am
happily re united with team
members from last season and am
excited for the new faces that
are joining.

Thanks for such a great
experience last year and all that
each of you has taught me in your
own ways.

Jugo de Cana

Sugar Cane juice. A favorite
drink amongst some of the staff
at the healing centre.

Interesting to taste, it is sweet
and thick.
A juice know to those raw
foodists out there enjoying how
it is full of cholorphyll.

Here in the picture you see the
machine the cane is run through,
pressing the juice out of the
stalk. The stalk is left behind

A favorite drink amongst the
staff at the healing centre, the
juice from a coconut.
Comes in its own container,
leaves you with a snack inside
after eating.
It filters water, re-hydrates
your body, replenishes
electrolytes to name a few.
Raw foodists sing praises of this
drink.
Rastafarians often use it instead
of water when making rice..YUMMY!
There are many different flavours
to this ‘pipa’ depending on what
stage of growth the coconut was

I love these trees covered with
these plants called bromeliads.
There are all kinds of different
bromeliads with different
flowers.
These plants live off of airborne
particles as their nutrient
source and make great decor
combined with driftwood pieces
for inside visual pleasure, extra
oxygen and easy to maintain.
